Sublime Soup and Seed Bread from Thornybush Lodge

Winter is our busiest time at the Thornybush Collection and our chefs are on top of their game when it comes to warming dishes to fuel the fires of adventure for our guests.

Our gourmet version of a cold-weather favourite is sure to set you up for a heart-warming success at your next dinner party. Serve it along with our quick and easy seed health bread for finger-licking dipping.

Quick Seed Health Bread

This wholesome snack tastes so great, you'll never believe it's good for you.


  • 4 cups Nutty Wheat Flour
  • 5ml Salt
  • 10g Instant Dry Yeast
  • 15ml Sesame Seeds
  • 15ml Poppy Seeds
  • 30ml Sunflower Seeds
  • 500ml Luke warm water
  • 30ml Sunflower Oil
  • 30ml Honey or Golden Syrup
  • Extra seeds for topping


Sift the flour and salt together, then add the yeast and seeds. In a separate bowl, mix the water, oil and honey together. Make a well in the centre of the dry ingredients and pour the liquid in. Mix well until a soft, doughy mixture is formed.

Spoon the dough into a 23cm loaf tin and sprinkle with the extra seeds. Drape a damp cloth or cling film over the tin and place in a warm place to rest for 30 minutes.

Heat the oven to 200c and bake for 45 minutes.

Broccoli and Brie Soup

  • 2 Punnets of Broccoli florets
  • 2 Onions sliced
  • 2 Cloves of Garlic
  • Mixed Thyme, Oregano and Marjoram
  • 1l of Chicken Stock
  • Salt and Pepper to taste
  • 100g Brie, crumbled


Fry the onions and garlic over a low heat until golden, then pour in the chicken stock and bring to the boil. Add the broccoli and mixed herbs and simmer until the broccoli starts to soften.

NB: Do not over boil the broccoli or you will lose the rich green colour of the soup.

Whizz the mixture together and stir in the Brie, salt and pepper.

Serve around a blazing campfire with the sliced Seed Health Bread and lashings of butter.

Even the seeds will do their bit by helping to lower cholesterol, aid digestion and keep your nervous system on an even keel.
